Healthy Vegan Berry Pancake Recipe


1 cup of flour
1 tbsp of baking powder
1/2 tsp of salt
3/4 cup of soy milk
1/4 cup of applesauce
1/2 cup of berries (fresh or frozen)

I am getting far too excited about Pancake Tuesday, so in anticipation of the great day I rustled up a batch today.

So this is how it’s done: Throw all the dry ingredients in one bowl and mix well, then do the same in a separate bowl with the applesauce, soy milk and berries. Once both components are well stirred they can be combined to make a lovely somewhat-lumpy and moist pancake mixture. Now you can start heating up your pan, I like adding a dollop of vegan margarine into the pan to give the pancakes a nice buttery taste.

Once the frying pan is nice and hot, scoop up some of your mixture and poor it smoothly into the pan. You should hear a satisfying sizzling noise. I let each side of the pancake sizzle for approximately a minute. The edges should be golden brown and crispy. Top finished pancakes with lavish amounts of berries and treacle. Enjoy.
