I am not quite sure how to describe this but it’s delicious! It can be used as a spread, dip, filling, sauce or dressing. It’s creamy, yummy and versatile and perfect for barbeques. To make a small bath you will need the following:
1/3 cup of sunflower seeds
1 cup fresh rocket
1/3 of a tiny garlic clove
2 tbsp of lemon juice
1 tbsp of oil
1 tsp of Dijon mustard
The only real prep necessary is to soak the sunflower seeds in water for a few hours or days, whatever you have time for.
Rinse the sunflower seeds and throw into a food processor together with the other ingredients. Add or subtract from the quantities listed above according to your taste.
Word of advice: go easy on the raw garlic, there’s a reason I suggest using only 1/3 of a clove. It’s potent stuff. Blend this as smooth as you like and keep tasting in between to get the flavour balance just right.
I personally love this creamy vegan spread on hassleback potatoes, as pictured above. But to be honest it makes almost every savory dish a little bit lovelier. Enjoy!
