This salad is light, refreshing and filling; perfect for a hot summer’s day. Also a nice break for your body if you’re feeling a little heavy from overindulging a bit too much in naughty treats. This lovely salad will give your body a boost, wash out the toxins and leave you feeling energized.
What you’ll need is the following:
- 1/2 cucumber
- 2 large tomatoes
- 1 avocado
- 1/2 lime
- 1 handful of parsley
For the dressing:
- 2 tbsp olive oil
- Salt & Pepper
- 1 tsp of red vegan pesto*
* if available, it’s not crucial. You can substitute with a tbsp of apple cyder vinegar.
Chop up the tomatoes, avocado and cucumber into bite sized bits. Very finely chop the fresh parsley and throw everything together in a big salad bowl or a mixing bowl. Cut the lime in half and squeeze over the veggies.
Now add the oil, pesto/vinegar and salt and pepper to taste. I used red vegan pesto for my dressing but most vinegars will go well with this salad as a substitute.
I love to devour this salad with some artisan wholegrain bread and aubergine spread. But to be honest it tastes amazing with everything! Maybe some seed-packed crackers with hummus?
