I love granola. I could eat it morning, noon and night. I try and stick to the mornings though. This recipe is perfect as it is absolutely brimming with anti-oxidants, fibre and protein to get you started for the day and keep you fuller for longer.
1 kilo of oats
1/2 tsp of salt
1/2 cup chopped peanuts
1/2 cup of chocolate nibs
1/4 cup of agave or brown sugar
1/2 tsp vanilla extract
oil until it gets clumpy
+ optional extra: pumpkin seeds, chocolate powder, seeds, nuts, dried fruits or whatever tickles your fancy
Mix all ingredients together in a large bowl. Add just enough oil to make it a little lumpy and clumpy. Spread onto baking tray and bake at 220 – 225 °C till tops start to brown then stir the mixture and brown some more. Continue till your granola is well tanned and delicious!
I love prepping jars of granola, fruit and almond milk in the evenings to give me a quick, easy and healthy breakfast in the morning. Just shake and tip into a bowl. If you are really lazy you could just eat it straight out of the jar. Depending on the fruit you can prepare almost an entire weeks worth in advance. This should keep you well away from quick-fix stodgy toast and processed cereals.
