Potato & Broccoli Soup

Good money saving tip: ask your green grocers what they’d like to give you cheaply in bulk. Buy it. Turn it into soup. Freeze it. So this week I got potatoes, broccoli and a humungous onion. The perfect ingredients for a comforting soup to enjoy on a cold day or pop in the freezer for later.


You will need:

2 large florets of broccoli
20 new potatoes / 5 large potatoes
1 large onion / 2 small ones
1 clove of garlic
5 cups of veg broth
2 tbsp dried chives
1 tbsp soy sauce
salt & pepper


Chop up the onion and garlic and fry in a pot with some olive oil for about 4-5 minutes. Once the onions are translucent add the broth and roughly chopped potatoes. Put a lid on it and cook for about 20 minutes, till potatoes are tender.


Now add the chopped broccoli and chives and boil for several minutes. Once the broccoli is tender blend the mixture to desired consistency. Add soy sauce, salt and pepper to taste. Done.

(*This soup is lovely with a smooth texture but also absolutely divine when left a little lumpy with chunky bits)

    This is a really great recipe! I saute the onion and garlic in water instead of oil. I love to make a large batch and put them in smaller containers to take to work with me. :) Thanks for sharing!
