Ingredients for a lovely Gluten-free Raw vegan Mango & Coconut Tarts with Brazil Nut & Fig Crust

These tarts are delicious, healthy, gluten-free, dairy-free, egg-free, sugar-free and easy as hell to make. No baking required. Great for dinner parties as they can be prepared in advance, no crazy running around. This recipe makes about 12 vegan mango and coconut tarts.

What you’ll need for the crust is:

  • 10 brazil nuts
  • small handful of cashew nuts
  • 10 small dried figs
  • 10 dates

And for the filling:

  • 1 small cup of desiccated coconut
  • small handful of cashew nuts
  • 1 fresh mango
  • (optional splash of almond/soy milk)

For the crust you start by adding the nuts to a food processor and blending til crumbly, then add the figs and dates till it’s all a sticky and crumbly mess. Grease a tin with coconut oil or vegan butter and start “shaping” the mixture into place.

Making the Brazil Nut & Fig Crust

Once all squished into place, leave the crust to harden in the fridge for at least an hour. In preparation of the filling put your cashew nuts into a cup of water to soak and soften.

Five minutes before you plan to take the crust out of the fridge you can make the filling. Drain your cashews and throw them in the food processor together with the desiccated coconut. Mix it it up until it’s a creamy paste. If it’s not quite the right consistency you can always add some almond milk or any other nut milk you might have in the house. This can then be added into the crusts.
