This humble loaf is real healthy autumn comfort food and a perfect start to your day. As spelt is an ancient grain it offers a broader spectrum of nutrients than modern wheat counterpart. It is packed with manganese, fiber, phosphorus, vitamin b3, magnesium and protein. Research has suggested that it can help prevent heart disease, breast cancer and reduce risk of atherosclerosis. Additionally the bananas and plums are rich in vitamins and anti-oxidants. A great breakfast, brunch or sweet snack for your lunch box.
What you’ll need for this healthy breakfast treat is:
- 1 cup of spelt flour
- 1 cup of oats
- 1 heaped tsp cinnamon
- 1 tsp baking powder
- 1 tsp salt
- 5 chopped up dates
- 1 tsp vanilla extract
- 1 large ripe banana/ 2 small bananas
- 1/3 cup of soy milk or nut milk
- 2 tsp apple cyder vinegar
- 7 fresh plums
Firstly preheat the oven to 200-220 degrees. While the oven is heating up you can start by adding all the dry ingredients together in a bowl and mix well. Throw all the wet ingredients in a blender together with the finely chopped dates and the banana. Give it a good blend and add to the bowl. Mix the wet and dry ingredients well, until completely uniform.
Grease your baking tin with vegan butter or coconut oil and add the mixture. Slice the plums and remove the stones then place on top.
By this time the oven should be hot enough. Pop in the loaf and let it bake for 20-25 minutes. To check if it’s ready a sharp knife can be used. Simply stick in the blade and check for moistness. Ideally the knife should come out of the baked mixture completely clean.
And voilà, you have a lovely healthy, egg-free, dairy-free, filling, sweet but zingy breakfast loaf.
