Fresh Coriander & Almond Pesto

Easy, cheap and healthy summer recipe. Perfect for salads, pasta, roasted veg and whatever else you can find.


What you’ll need for 2-3 generous helpings are the following:

  • 1 clove of garlic
  • 1-2 cups of fresh coriander
  • a handful of almonds
  • juice of 1/2 lemon
  • olive oil
  • salt & pepper
  • + nooch if desired

Start off by roughly cutting the almonds and toasting them in the oven for 3-4 minutes. And that’s all the cooking done.

Stuff all the ingredients in a food processor and blend. Have a taste and adjust olive oil, lemon, salt and pepper to taste. I like to add nutritional yeast to mine to give it a cheesy undertone.


Now all you need to do is decide what you want to slather in pesto. Personally I enjoy spiralized courgette mixed with some fresh tomatoes and lettuce.
