Vegan Kale and Avocado Coleslaw

Here’s a light and fresh recipe to get you ready for the summer and get you in the bbq mood. It’s a delicious, healthy and vegan alternative to your normal coleslaw. I like to enjoy it with some chili roast potatoes.

Egg-free vegan kale avocado coleslaw

What you’ll need is:

  • 3 big handfuls of kale
  • 1/2 sweetheart cabbage or any cabbage of your choosing, finely sliced
  • 2 carrots, grated
  • 1/4 red onion, finely chopped
  • 2 avocados
  • 2-3 tablespoon lemon or lime juice
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • vegan yoghurt or hummus [optional]

Chop, slice and grate the main veg. I like to massage the kale before chopping it up finely or if you’re in a rush just put it straight in the food processor until fully shredded. Pop all in a bowl and get cracking on the dressing.

Scoop out the avocados and add into food processor along with the fresh lemon juice, a splash of olive oil and salt and pepper to taste. If you’d like to make it extra creamy you can add in some vegan yoghurt or hummus. Once blended to a smooth consistency pour over the carrot, kale, onion and cabbage. Mix it all in thoroughly and enjoy.
